We sell three distinctive flavours:

Grey Ironbark, Eucalyptus Siderophloia (Spring flowering)

This light amber honey is high density with a very sweet ironbark flavour.

Blue Gum, Eucalyptus Tereticornis (Winter flowering)

A dark amber honey with a rich caramelised flavour.

Tea Tree, Melaleuca Quinquenervia (Autumn and Winter flowering)

Derived from paperback forests, this honey is a dark amber colour. It has a rich and slightly sharper flavour than our other flavours and will candy when kept in cool conditions.

Our honey is: 

• locally sourced
• unblended so it retains the distinctive varietal differences
• not exposed to excessive heat that denatures natural enzymes
• only coarse strained to retain pollen
