RECIPE:

 

The Amazing Chickpea Spinach Salad

Ingredients:

  • 1-1/2 cups or 1 can of drained chickpeas
  • 1 large handful of spinach
  • 100g of feta or cheese of choice
  • 1 small handful of raisins
  • 1/2 tbsp of lemon juice
  • 1 tbsp honey
  • 4 tbsp olive oil
  • 1 tsp ground cumin
  • pinch of salt

Instructions:

  1. Chop the cheese and add with the spinach and chickpeas to a large bowl
  2. Mix the honey, oil, lemon juice and raisins in a small bowl
  3. Add the cumin, salt and pepper to the dressing bowl and mix well
  4. Drizzle devilishly delicious dressing over the salad
