Blueberry Almond Chia Pudding Recipe

Blueberry Almond Chia Pudding

Serves 4
Ingredients:
2 cups of almond milk
1/4 cup of creamy almond butter
1-2 tablespoons of maple syrup (adjust to your sweetness liking)
1/4 teaspoon of cinnamon
1 teaspoon of vanilla
1/2 cup of chia seeds
1/4 cup of blueberries
Topping:
1/4 cup of almond butter
1 1/4 cup of blueberries
Instructions:
1. Mix together the almond milk, almond butter, maple syrup, cinnamon, vanilla and 1/4 cup of blueberries in a blender. Blend until smooth.
2. Pour into a bowl and whisk in the chia seeds. Let rest for 5 or so minutes then stir again until all clumps are gone. Cover and refrigerate overnight.
3. In the morning, give the pudding a good stir. Divide into 4 bowls, top with berries and almond butter and enjoy!
