- 3/4 cup coconut milk canned (180g)
- 3 tbsp nutritional yeast
- 2 tbsp arrowroot starch
- 1/2 tsp sea salt

- 2 cups of whole almonds

Instructions:

No-Bake Apricot Almond Coconut Energy Bites

Ingredients:
- 1 ½ cups raw almond
- 1 cup dried apricots
- ½ cup shredded coconut
- 2 Tbsp. almond butter
- 1 Tbsp. chia seeds
- ½ tsp. pure vanilla extract
- ½ tsp. cinnamon
- ¼ tsp. nutmeg
- pinch of sea salt
- 1-2 Tbsp. water (if needed – add 1 tbsp. at a time)
- For a citrus twist, add ½ tsp. orange zest and juice from ½ an orange
Instructions:
- Line a 9 x 5 inch loaf pan with parchment paper or plastic wrap. Combine all of the ingredients in a food processor except for the water. Process on low speed for several minutes stopping to scrape the sides of the bowl as needed.
- Ingredients will start to come together after a few minutes. If you feel the dough is too dry add 1 Tbsp. of water at a time and continue to process until ingredients start to stick together (see photo above for visual examples).
- Transfer the dough to the loaf pan and press down firmly into the bottom of the pan. Top with coconut shreds (pressing them lightly into the surface) then place the bars in the fridge for 30 minutes or freezer for 10 minutes.
- After chilled, remove bars from pan. Cut into 8 bars or squares.
- Store bars in refrigerator.

Raw Buckwheat Porridge

Yield: Four 1-cup servings.
Porridge:
- 2 cups raw Buckwheat Groats, (note: this is not the same as Kasha) soaked in water for minimum of 1 hour or overnight
- 1.25 cups almond milk
- 2 tbsp chia seeds
- 1/4 cup liquid sweetener (use Agave if you want it raw. I used maple syrup), or to taste
- Pinch of kosher salt
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
Optional Toppings:
- Chopped fruit or dried fruit (banana, Berries, kiwi, apple, peaches, nectarines, raisins, mango, etc)
- Chopped nuts and or seeds (I used almonds)
- Nut Butter or ABU
- Toasted coconut, chocolate chips, etc
Directions:
1. In a bowl, pour 2 cups of raw buckwheat groats and 4 cups of water. Soak for at least 1 hour or overnight. After soaking, rinse well in a strainer several times.
2. Place buckwheat groats in food processor or blender, along with the almond milk, chia seeds, and vanilla. Process until combined and slightly smooth. Now add in the sweetener and cinnamon to taste (I found 1/4 cup of sweetener was enough, but others might like a bit more or less than that).
3. Scoop into bowls or parfait glasses and add your desired toppings & mix-ins. Serve immediately cold. Place leftovers into fridge and enjoy for the next few days. Makes 4 cups at about 385 calories per cup (using 1/4 c maple syrup, but without toppings).

- 1 medium avocado

- 1/2 tsp pure vanilla extract
- 1/4 cup cacao powder
- 1 cup quick or old-fashioned oats
- 1/4 cup cacao nibs
- 1/4 cup chia seeds
- 8 Medjool dates, pitted & chopped
- Cacao powder and unsulphured coconut flakes, for coating (optional)
Instructions:
- In a medium bowl, add bananas, avocado, coconut oil and vanilla; mash with a masher until smooth. Add remaining ingredients and mix until well combined.
- Scoop some dough using small cookie scoop and roll into a golf size ball between the palms of your hands. If desired, spread coatings on plates and roll bites in them. Place in storage container and repeat this step until run out of dough. Enjoy chilled or thawed from a freezer.

Instructions:
Whisk all the ingredients together until smooth but still liquid. If it’s too thick, add more coconut nectar or melted cacao butter.
Taste it and make sure you are in love, otherwise adjust it to your desires.
Pour into chocolate molds or onto parchment paper and set in the fridge for an hour or two, until solid. Enjoy!
