We're big fans of zucchini slice in this household. I sneak it into lunches, in salads, on breakfast plates and it makes a really easy, lazy dinner. They are loaded with veggies, budget friendly and generally fussy eater approved.
This recipe is simple yet delicious, and is dairy free and gluten free. However, feta can be added on top for the cheese lovers out there!
Enjoy xx
