Vegan Candy Cane Fudge

It’s our last meatless Monday until Christmas so we have to go out with a bang! This vegan candy cane fudge will impress the best with its rich flavor and chewy texture.
It’s easy peasy and budget friendly.

Vegan Candy Cane Fudge

Ingredients:
- 6 tbsp nutlex
- 3 1/2 cups of icing sugar
- 1/2 cup sifted raw cacao powder
- 1/2 tsp peppermint flavor
- 1/4 cup soy milk
- 2 peppermint candy canes
Instructions:
- Line a pan with parchment paper
- Crush the candy canes with whichever method you prefer
- Put the nutlex, cacao, sugar, peppermint & soy in a heat-proof mixing bowl for a double boiler.
- Place bowl over simmering hot water & stir until smooth. Add more soy milk if needed. When the mixture is smooth, pour quickly into the pan.
- Sprinkle the crushed candy canes on top and press in gently.
- Place in fridge and chill until set.
