Organic Pistachios Roasted & Salted

Being a good little nut, pistachios are really delicious as well as nutritious. They're great for the heart, full of nutrients and you can even serve them to the fancy guests. 

They come in the shell, both raw and roasted and salted. They're very tasty and can be eaten solo or added to many dishes to up the yum factor. 

 

HEALTH BENEFITS:

Pistachios are a tree nut with a lot to offer. If you're a health nut and a foodie, these guys are for you. They assist with:

  • Heart health- they encourage healthy arteries & have unsaturated fatty acids & phytosterols.

 

  • Weight management- as they are low in calories & high in protein. Low
  • saturated fat & high unsaturated fats.

 

  • Good on the eyes with their carotenoid antioxidants.

 

  • These little guys are thought to be an aphrodisiac for men. Line up, ladies. 

 

  • High in anti-inflammatories as well.

 

 

NUTRITION:

The list for these guys is a good one as they are high in:

  • Phosphorus, potassium & calcium
  • Iron, magnesium & zinc
  • Copper and selenium

Serve per 100g: 27.97g of carbohydrates, 10.3g of fibre, 20.6g of protein, 44.4g fat.

 

 

USE IT!

Pistachios are a tasty nut so well loved across the board. They're most often enjoyed as a snack but are fantastic in your baking and mixes as well. They're a real crowd pleaser.

 

RECIPE:

Pistachio Pudding courtesy of Unconventional Baker

Ingredients:

  • 1 ripe avocado, peeled and de-pitted
  • ¼ cup pistachios, pre-soaked 15 mins in warm water {or longer in cold water}, then strained
  • 5 tbsp maple syrup
  • 5 tbsp water or coconut water
  • dash of salt
  • 1 tsp pure vanilla extract
  • 1 tsp rose water
  • ½ tsp almond extract
  • 1 tsp lemon juice
  • Optional: 1 handful of baby spinach leaves {add if you want to adjust the color if your pistachios are not very vibrant — I did not need to add any to the pudding in the pictures, but I had some gorgeous-looking pistachios to work with}
  • Garnish: more chopped pistachios + salt flakes

 

Instructions:

  1. Place all ingredients, except garnish, in a high power blender and blend everything into a smooth consistency. Stop and scrape down the sides as needed.
  2. Once the mixture is smooth, transfer the pudding into 2 small jars or glasses cover and place in the freezer for about 30 minutes to an hour to chill. When ready to eat, garnish with extra pistachios {chopped or whole} and sprinkle with some coarse salt flakes, and enjoy!
