Healthy Chocolate Chip Pancakes

  • 1 cup wholemeal spelt flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • 2 eggs
  • 2 tablespoons honey
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (or as needed)
  • 1/3 cup dark chocolate chips

  1. Directions:

In a bowl, whisk spelt flour, baking powder, cinnamon, and salt. Add eggs, honey, almond milk, and vanilla extract and mix until batter is smooth. Fold in about a 1/3 cup of chocolate chips.

  2. In a skillet, heat coconut oil over medium heat. Add about a 1/4 cup of batter at a time into the skillet and cook for about 3-4 minutes. Flip, and cook until browned on the other side, 2-3 minutes. Repeat with remaining batter.

  3. Serve with a dollop of yogurt, maple syrup, and chocolate chips for garnish. Enjoy!

This recipe makes about 4-6 small pancakes.
